Tis the season....for Chicken noodle soup!

I'm sure you all in FL will agree..tonight was a chilly night. It is currently 37 degrees and it feels it! Therefore will all of the colds/flu going around I felt it was a great night for Chicken noodle soup. Here is what I did:

*Homeade chicken stock (I make this and store containers of it in my freezer to have on hand, for things like this)

*Veggies to your liking: I used carrots, celery, onions, scallions, and leeks.
Dice/slice to your liking.

*Seasonings to taste: sea salt, cracked black pepper, bay leaf, and j.seasoning(a family secret)

*Breasts of chicken

*Noodles of your choice ( I use whole wheat egg noodles)
1. Bring chicken broth to a boil.
2. Submerge the entire breast of chicken into the boiling chicken broth...until cooked through. I then take the breast out. Allow to cool, then shredd and add back to the pot.
3. Place vegetables and seasonings into pot.
4. Allow vegetables to become soft and cooked through.
5. Place noodles in pot and allow to cook in broth.
6. Serve and eat!

ENJOY!
